It has a rich nutty flavor and is high in protein, fiber, magnesium and iron. It is also known at Farro in Italy. It can be cooked whole and used in salads and soups, or in place of oatmeal for your breakfast. It can also be milled into flour and used for baking, it is lower in gluten, so is perfect for making focaccias, flat breads, crackers, and pastas.
